1) Rub steak or roast with salt,
pepper, paprika, garlic, and thyme.
2) Set the grill to "Smoke" or 180˚F.
3) Place on grill grate and cook until
desired doneness.
4) Set aside to rest for 20 minutes.
5) Increase temperature to the highest
setting and allow grill to fully preheat.
6) Sear meat on the hot grill grates for a couple of minutes
on each side.
